El Tundo

Coffee production in El Tundo has been a continuous practice for over 30 years and serves as the main source of livelihood and economic activity for many people in the region. The contributing producers of El Tundo belong to the second or third generation, and they have adopted agroforestry systems on their farms, primarily utilizing pacae trees for shade. In the past, their coffee production followed traditional methods, which involved selling "bola" coffee, a type of low-quality natural coffee. However, over time, they have transitioned to producing washed coffee and have achieved better quality results.

Recently, they have made some notable changes in their coffee production practices. For instance, they have started fermenting the coffee in closed, airtight containers, both with and without the addition of water. Through collaboration with the PECA technician, they have made improvements in the drying process, which has yielded positive outcomes for their coffee.

In terms of coffee varieties, they have preserved some of the original Typica varieties passed down from their grandparents and parents. Additionally, they have begun implementing new varieties such as Typica Mejorada, which is a variant of Typica. These environmentally conscious producers are mindful of their impact on the environment and actively work on topics such as utilizing organic residues from the farm to produce their own organic fertilizers.
